Asparagus Stuffed Chicken Breasts |
INGREDIENTS 1 fresh chicken breast per person, skinned & boned ~ tin asparagus tips ~ 2oz grated cheese ~ 2oz fresh breadcrumbs ~ seasoning ~ loz butter ~ ltbsp plain flour ~ 1/2pt milk or 1/4pt cream ~ chopped chives or spring onion tops. METHOD 1) Mix together drained, chopped asparagus, cheese, breadcrumbs and seasoning. 2) Slice chicken breasts to make envelope and place stuffing inside each. 3) Make white sauce (melt butter, stir in flour, add cream and stir well until thick) and add chives. 4) Pour sauce over chicken in baking dish and bake in medium oven for 45 minutes. |
